Thai Chicken Red Curry

This recipe is easy to make using just 1 pot. You can sub rice of choice and protein of choice.

Serves 2-3 depending on hunger level. If 3 add in an extra chicken breast. 

Recipe:

2 tbs curry paste

2tsp coconut oil

2 chicken breast (sliced) 

100g mushroom 

100g baby corn 

100g snap peas 

1 can coconut milk 

2 tsp tamari (or soy sauce)

200 g brown rice (cooked)

Lemon wedge to serve

Procedure:

1. Add coconut oil and curry paste to a heated pan on medium heat.

2. Add the mushrooms and mix well.

3. Add in the chicken and cook thoroughly.

4. Once the chicken is cooked, add in the coconut milk and remaining veggies. Feel free to add whatever vegetables you want. 

5. Cook for 10 minutes. 

6. Remove from heat and add in the soy sauce. Mix well. 

7. Serve over brown rice with some chili flakes and a slice of lemon.
