Pesto Zoodles

Zucchini Noodles with a #vegan avocado-pesto sauce πŸ₯‘ 🍝 This was requested by one of our followers! Feel free to request any recipe you would like to see. I would probably top it off with some grilled shrimps next time. This recipe will yield 2 bowls.

Recipe:

For the Zoodles:

3 zucchini 

2 cloves minced garlic 

A drizzle of olive oil

1. Use a spiralizer to transform your zucchini into a spaghetti shape. (I bought mine from @williamssonomamena) 

2. Heat a pan with a drizzle of olive oil, then add the garlic.

3. Toss the zoodles on the pan to coat it completely, and met it sit for a couple of minutes.  4. Set it aside to cool.

For the sauce:

1 soft avocado 

2 tbs lemon juice 

2 tbs olive oil 

1/4 cup walnuts (opt) (leave out for nut free version)

1/3 cup basil

Salt&Pepper to taste 

1. Blend everything but the walnuts in a food processor. I made the mistake of adding in the walnuts and the texture disappeared.

2. Add in as much water as you want to make it the consistency you like. 

3. Pulse in the walnuts but do not fully blend it in the mixture. 

4. Pour the sauce onto the zoodles and serve with whatever protein you wantπŸ˜‹.
