Vegan Sweet Potato Gnocchi

This is made with just 2 ingredients! I tossed it with some olive oil, garlic, mushrooms, spinach, and a squeeze of lemon and it was really good😋 Topped it off with some toasted almonds too for some crunch! 

Ingredients for the gnocchi:

2 sweet potatoes, boiled

3/4 cup spelt flour or whole wheat flour, plus more. 

Salt

1. Peel the sweet potatoes and place them in a food processor or mash them very well by hand. Transfer it to a large bowl. 

2. Mix in the flour 1/4 cup at a time to form a dough. You will probably need more than 1 cup but add it slowly. 

3. Flour a surface, and divide the dough into 4 equal pieces. Roll the dough to form a log, and cut it into 1/2 inch pieces. Be sure to keep flouring the surface to make sure it doesn’t stick. 

4. Optional: take a fork and press on the gnocchi to form the traditional ridges. 

5. Bring salted water to a boil, and cook the gnocchi 4-6 pieces at a time. Take it out of the water once it floats. 

6. Once all the gnocchi is cooked, toss it with your sauce of choice.
