Oven Baked Salmon Power Bowl with cauliflower rice
I was so excited to use seasonal purple cauliflower and mixed carrots from @saveco. You can use whatever veggies you want.
Ingredients:
2 tbs olive oil
1/2 tsp paprika
1/2 tsp onion powder
1 tsp minced garlic
1 tsp minced ginger
1/4 tsp cayenne pepper
2 tsp agave or honey
1/2 lemon, juiced (save the other half for the rice)
Veggies of choice (I used mushrooms, carrots, and asparagus)
Procedure:
1. Preheat oven to 205 deg C.
2. Line a baking tray with aluminum foil.
3. Pat dry your piece of salmon, and lightly mark the top of the salmon with a few slash marks.
4. Season with salt + pepper and place it on the baking tray.
5. Brush the salmon with the marinade.
6. Add the rest of your veggies to the pan and lightly spray them with spray oil (I used Avo oil) and season them with salt and pepper.
7. Bake everything for 10 minutes. If you like your salmon well done bake for an additional 2-5 minutes. Note: carrots take longer to bake, so if you add carrots make sure to adjust
For the cauliflower rice:
1 head of cauliflower
A couple slices of green chilli (optional)
Sesame oil or spray avocado oil
1/2 lemon, juiced
1 tsp ginger, minced
1 tsp garlic, minced
Procedure:
1. Lightly coat the pan with some oil and heat everything together (except the lemon) in a skillet on medium-high heat for 5 minutes. Add the lemon and mix well.
