Asian Sesame Noodles
You can improvise with whatever vegetables you have. I listed what I used, so feel free to add/omit anything.
Ingredients:
1 serving asian rice noodles or buckwheat noodles
1 handful of cabbage
1 knob ginger, minced
1 clove garlic, minced
1/2 small onion, minced
5 mushrooms, sliced
1/4 cup of baby corn
Handful of spinach
1 spring onion, sliced
Sesame seeds
Sesame oil
For the sauce:
1 tsp sesame oil
3 tbs soy sauce or tamari for GF
1 tbs rice vinegar
1/2 tbs Sriracha
1 tbs sesame paste (tahini)
1 tbs maple syrup
1 tsp chili paste, optional
1. Cook the noodles according to the instructions on the packaging.
2. In a wok, heat up some sesame oil, and cook the onion, garlic, and ginger until the onions turn translucent.
3. Add the veggies, leaving out the spinach.
4. Add 3tbs of water and cover the pan, letting the vegetables soften.
5. Mix all the ingredients for the sauce in a small bowl.
5. Once most of the water has evaporated, add the sauce and let it simmer.
6. Add the noodles and spinach to the vegetable mixture, toss everything together. Sprinkle with some sesame seeds and some extra chilli 🌶.
