Cashew Chicken
Cashew Chicken Rice Bowl. This recipe can be prepared ahead of time and used for multiple dishes throughout the week.
Ingredients:
3 tbs peanut butter (or cashew butter)
2 tbs soy sauce
2 tbs honey (or maple syrup)
2 cloves garlic
A handful of raw cashews
1 tsp spice of choice (we added paprika and a sprinkle of all spice and turmeric)
2 chicken breasts (diced) (1 for the rice and 1 for the rolls)
1 head broccoli
2 red chilies (diced)
Handful of cilantro
A bowl of brown rice
Procedure:
1. Preheat oven to 200 deg C
2. Whisk the nut butter, soy sauce, sweetener, garlic, and spices in a large bowl.
3. Add the diced chicken and broccoli and coat well.
4. Transfer the mixture into an oven safe deep dish.
5. Bake for 20 minutes.
6. While it is baking, heat up the cashews until it turns golden brown.
8. Assemble your rice bowl with the chicken and broccoli. Enjoy or keep in the fridge to heat up for another time.
