Curried Vegan Patties
made with sweet potato, quinoa, and chickpeas 😋 served with a salad bowl and traditional tahini dressing. Lots of people have been requesting vegan dishes! This is very easy to make and versatile too. You can have the patties in a wrap or on top of a simple salad.
Serving: makes 4 patties
Ingredients:
1 can chickpeas (rinsed & drained)
1 tbs (plus more for cooking) EVOO
1 tsp curry powder
2/3 cup raw cashews
2 tbs ginger (minced)
4 cloves garlic (minced)
Chili (as much or as little as you like)
2 tbs tomato paste
1/2 cup chopped cilantro (optional)
1 cup cooked quinoa
1 and 1/2 cup diced sweet potato
Procedure:
1. Preheat oven to 190degC and line a baking tray with the chickpeas. Toss it with the oil, a sprinkle of salt, and curry powder. Bake for 20 mins or until the chickpea is crispy.
3. Steam the sweet potato, then mash it well.
4. Add the chickpeas, cashews, chili, ginger, garlic, tomato paste, 3/4 tsp salt, and curry powder in a food processor and blend until it turns into a textured dough like consistency (not a purée).
5. Transfer to a bowl and add the mashed sweet potato. Mix well.
5. Divide the mixture into 4 equal sized patties. Cook on a skillet with a little oil on medium heat for 3 minutes on each side, or until golden brown.
Serve with your salad of choice to make your own salad bowl 🍲
