Chicken Curry Lettuce Wrap

This recipe yields 4 lettuce wraps.

Recipe: 

2 chicken breast, diced

1 onion chopped

1/2 tbs minced garlic

1/2 tbs minced ginger

1 can of coconut milk

A handful of curry leaves

2 tbs coconut oil or oil of choice (to fry)

2 tsp mustard seeds

2 tsp garam masala

1 tsp turmeric 

1 tsp chili powder

240 ml natural runny yoghurt

1/2 tsp salt

1/2 tsp honey or coconut sugar

1 tbs ground almonds 

4 fresh lettuce leaves 

Procedure:

1. Heat the oil in a pan and add the mustard seeds. Cook until it starts to pop.

2. Add the curry leaves and right after it, add the garlic, ginger, and onion. Cook for 8 minutes or until it starts to brown. 

3.Add the chicken, masala, turmeric, and chili powder. Cook until the chicken is almost done (10 minutes). 4. Add the yogurt, coconut milk, salt, ground almonds, and honey (or coconut sugar). Cook until the chicken is cooked thoroughly. 

5. Serve on the lettuce and enjoy 😋
