Asian Chicken Salad

You can leave out the chicken to have it as a side 😋

Serving Size: 2 

Ingredients:

For the salad: 

2 grilled chicken breasts, shredded 

5 cups shredded lettuce 

2 cups sliced red cabbage 

3 cups shredded carrots 

3 tbs green onion 

1/3 cup toasted slivered or sliced almonds 

1 tbs sesame seeds 

For the dressing:

2 tbs toasted sesame oil

2 tbs tamari or light soya sauce 

3 tbs rice vinegar

2 tbs olive oil 

1 tsp coconut sugar, or sweetener of choice 

1 clove garlic, minced 

1.5 tsp ginger, minced 

1/2 tsp pepper 

1 tbs sriracha, opt 

1 tbs peanut butter, microwaved if thick 

Procedure:

1. Toss the salad ingredients together in a large bowl. 

2. In a jar with a lid, add all the dressing ingredients together and shake well. Let it sit for a couple of minutes to absorb the flavors. 

3. Mix in the dressing a little at a time. You can save the remaining dressing in the fridge.
