Beetroot Hummus

This was one of the recipes done at our cooking class. It’s so easy, all you need is a food processor and simple ingredients.

Recipe:

2 beets 

1 can chickpeas (rinsed and drained)

1 lemon juiced (or a little more if you like it lemony)

1.5 cup tahini (preferably un-hulled)

2 cloves garlic (smashed)

1/2 tsp salt

1/4 tsp cumin

Water (as needed to thin it)

Procedure:

1. Preheat oven to 200 deg C.

2. Slice the beets and roast them for 30 mins in the oven.

3. Blend all the ingredients in a food processor. Add a little water at a time to thin it down as needed. 

Serve with some bread or sliced veggies!
