Vegan Cinnamon “Sugar” Cookies

These are very similar to snickerdoodle cookies but much healthier since they are oil-free, refined sugar free, and vegan. 

Ingredients: 
1 cup spelt flour
1 tsp baking powder 
1 tsp cinnamon 
3/4 cup coconut sugar 
2/3 cup cashew butter 
2 tbs coconut milk , or milk of choice
1 tsp vanilla extract
1 flax egg-3 tbs flaxmeal+ 1 tbs water let it sit for 5 minutes to thicken 
2 tbs unsweetened apple sauce *preheat oven to 180 deg C

Procedure:
1. Mix the flour, baking powder, and cinnamon together in a medium bowl. 
2.Mix the cashew butter, milk, coconut sugar, vanilla, and apple sauce in a large bowl until it turns into a smooth mixture. (Use an electric mixer to make it easier)
3. Add the dry ingredients to the mixture and mix well. 
4. Put gloves on and shape the dough into cookies. It will be slightly sticky so you can grease your hands. 
5. Place them on a greased or lined baking tray in a preheated 180 deg C oven for 7 minutes. They should be soft when taken out since they harden when cooled, but you can keep them longer depending on your oven. You can top them with some cinnamon sugar by mixing 1 tbs coconut sugar with .5 tsp cinnamon, but I didn’t do that since I wanted to keep the sugar content as minimal as possible.
