Chocolate Molten Cake
Ingredients:
4.5 oz No sugar added dark chocolate
1 tbs almond butter or cashew butter
2 tbs apple sauce
1.5 tbs coconut oil
2 eggs
1 tsp vanilla
1/4 cup coconut sugar
2 tbs almond flour
1/4 tsp baking powder
Nut Butter of choice (optional)
*preheat oven to 205 deg C*
Procedure:
1. Melt the chocolate and coconut oil on a double boiler, or place it in the microwave at 20 second intervals.
2. Mix in the almond butter to the chocolate while it’s still hot.
3. In a separate bowl, use an electric mixer to combine the eggs, coconut sugar, apple sauce, and vanilla. Stop once the coconut sugar dissolves in the mixture (around 2 minutes).
2. Add the egg mixture to the chocolate mixture and mix well.
3. Add in the almond flour and baking powder.
4. Grease 2 ramekins, and spread the batter in a single layer. Add in 1/2 tbs of your nut butter of choice in the center (optional), and continue with the remaining batter on top filling it 3/4 of the way since it will rise.
5. Bake for 10 minutes.
