Vegan Chocolate Cake with Chocolate “Cream” 🍫

This cake is vegan & refined sugar free! 😋 

Recipe:

For the cake:

2 cups spelt flour

1/2 cup almond flour 

2 tsp baking powder

2 tsp baking soda

6 tbs cacao powder (or unsweetened cocoa powder)

1 avocado

2 cups boiling water + 1 tbs instant coffee (mixed)

1/4 cup coconut oil (melted)

2 tsp unsweetened apple sauce (you can sub vinegar)

1 tsp vanilla 

1.5 cup coconut sugar 

Procedure:

1. Mix the flour, baking powder, baking soda, cacao powder in a large bowl. 

2. In a blender, combine the avocado with the oil, apple sauce, sugar, and half of the coffee water mix. 

3. Form a well in the flour mixture, and pour the wet mixture in. Add the remaining coffee mixture and fold it in well. Keep on folding the mixture until it turns into a uniform batter. Do not over mix it. 

5. Grease 2 8-inch cake pans and divide the mixture between the two. Bake for 25-30 minutes at 178 deg C preheated oven. 

For the chocolate “cream”:

1/2 cup cashew butter

1/4 cup cocoa powder 

5 tbs coconut milk (or non dairy milk)

3 tbs maple syrup 

1. Microwave the cashew butter for 20 seconds, then add the remaining ingredients in the bowl and mix well.
