Gooey Chocolate Chunk Cookies 🍪

These cookies were inspired by @hukitchen‘s recent cookie post! They are vegan, refined sugar free, and gluten free 😋 

Recipe:

1 cup tahini 

1 and 1/4 cup almond flour (I subbed 1/4 cup vegan vanilla protein powder) 

1/3 cup maple syrup

1 flax egg

1 tsp baking powder 

1 tsp vanilla 

2 hu’s kitchen chocolate bars chopped into chunks (you can sub 1 cup of any refined sugar free chocolate chips you have) 

Directions:

1. Preheat oven to 178 degrees C

2. Combine all ingredients except the chocolate in a bowl. 

2. Fold in the chocolate.

3. Line a baking tray with parchment paper or a mat and scoop out the cookie mixture. 

4. Bake for 12-15 minutes in the oven. 

Note: they will seem a little undercooked when you take them out, but it’ll harden once it cools.

1 flax egg= 1 tbs flaxmeal + 3 tbs water
