Refined Sugar Free Brookie Recipe


You can easily adapt this recipe to make the cookies/brownies separately.

Recipe:

The chocolate chip cookie base:

1/4 cup coconut oil (room temp)

1/4 cup peanut butter (or almond butter)

1/4 cup maple syrup (or honey)

1 egg

1 tsp vanilla extract 

A pinch of salt 

2 cups almond flour

50 g dairy free (no sugar added) dark chocolate

Procedure:

1. Mix all the ingredients together except the chocolate.

2. Break in the chocolate into chunks and mix it in.

3. Grease a baking tray with coconut oil and spread the cookie dough evenly. 

4. Place in fridge to cool.

For the brownies:

75 g dairy free (no added sugar ) dark chocolate

2 tbs coconut oil 

1/3 cup cacao powder (or 100% cocoa powder) 

2 tbs maple syrup (or honey) 

2 eggs (you can sub flax eggs if vegan)

1 tsp vanilla extract 

Salt

1/2 cup almond flour

1/2 tsp baking powder

Procedure:

1. Preheat oven to 175 deg C. Melt the chocolate and coconut oil using a double boiler or microwave (be careful not to burn it).

2. Add in the maple syrup (or honey) and cacao powder. Allow it to cool a bit.

3. Once cooled, add in the eggs and stir well.

4. Add in the vanilla and salt. Mix well. 

5. Add the almond flour and baking powder. Stir to ensure everything is well mixed. 

6. Pour the brownie batter on the caramel-cookie to form the final layer. Smooth it out. 

7. Cook in the oven for 25 minutes, or until it firms up in thee middle. 

8. Cool, cut, and enjoy with some extra caramel sauce on top 😍
