Savory Chickpea Pancakes

This recipe is an easier take on our favorite chickpea “omelette” from farmacy! It’s high in protein and so easy to make😋Took me less than 10 minutes total (including cooking time).

This recipe makes 4-5 small pancakes.

Recipe:

1 cup chickpea flour (gram flour)

1/2 cup water 

1/2 a lemon (juiced)

Salt/pepper

Additional spices of choice. I used: paprika, turmeric, chili flakes, ground coriander

For serving: hummus, or diced avocado with lemon and tomatoes! 

Procedure:

1. Whisk the gram flour with the water, but add the water a little at a time to ensure the right thickness for you. Add more water if you want to thin it down. 

2. Add in the lemon and spices. Mix well.

3. Heat a small pan with olive oil. Cook like traditional pancakes, be careful not to flip it too early. 

4. Serve with some hummus, veggies, or avocado salsa. 

Note: you can add in whatever veggies you like (diced) into the batter.
