“Ferrero Rocher” Energy Bites

Ingredients:
12 medjool dates, soaked and pitted 
3 tbs cacao powder 
1 cup hazelnuts, plus 1/2 cup for garnish 

Directions:
1. Using a food processor, blend 1 cup hazelnuts with the dates and cacao powder. It will take a couple of minutes to form a dough-y texture. If it is too dry add more dates. 
2. Crush 1/4 cup hazelnuts using a food processor or with a zip lock. 
3. Form the dough into 2 inch balls, and stuff each with 1 whole hazelnut. Roll the balls into the crushed hazelnuts to coat the outside. 
4. Store in the fridge to snack on throughout the week 😋
