Curried Sweet Potato Patties (Vegan)

A different take on a traditional falafel patty! These vegan patties are made with sweet potato, quinoa, and chickpeas. You can have it with a salad bowl base, or in a wrap.

Serving size: 4 Patties

Ingredients:

1 can chickpeas (rinsed and drained)

1 tbs (plus more for cooking) EVOO

1 tsp curry powder

2/3 cup raw cashews

2 tbs ginger (minced)

4 cloves garlic (minced)

2 tbs tomato paste

1/2 cup chopped cilantro

1 cup cooked quinoa

1 and 1/2 cup diced sweet potato

Chilli (as much or as little as you like)

Procedure:

  1. Preheat oven to 190 deg C and line a baking tray with the chickpeas. Toss with the EVOO, a sprinkle of salt, and a sprinkle of curry powder. Bake for 20 minutes, or until it turns crispy.

  2. Steam the sweet potato, and mash it.

  3. Add the chickpeas, cashews, chilli, ginger, garlic, tomato paste, salt and curry powder to a food processor and blend until it turns into a textured dough consistency.

  4. Transfer to a bowl and combine it with the mashed sweet potato.

  5. Divide the mixture into 4 equal sized patties. Cook on a skillet with some spray oil or evoo on medium heat for 3 minutes on each side (or until golden brown).

Serve it with some tahini dressing and enjoy!
