Spicy Miso Noodles
Buckwheat Noodles w/ a Spicy Miso Coconut Curry ππ½ I got my miso paste and buckwheat ramen noodles from @saveco.
Ingredients:
1 portion noodles cooked based on package instructions
1 can coconut milk
125 g mushrooms, sliced
1 small onion, chopped
2 cloves garlic, chopped
1 knob ginger, sliced
1 lemon, juiced
1 tbs maple syrup
1 tsp miso paste
1-2 tsp chili paste (dep. on your tolerance to πΆ)
1/4 tsp turmeric
1/4 tsp curry powder
1/4 cup water
Salt & pepper
Spray oil
Vegetables of choice. I used:
A handful of spinach
Baby Corn
Asparagus
1. Spray a deep pan or wok with spray oil, then sautΓ© the onions with the garlic until the onions turn translucent.
2. Add the ginger and mushrooms. Continue to cook until the mushrooms soften on medium heat.
3. Add the coconut milk, chili paste, turmeric, curry powder, salt, and pepper. Mix well.
4. Add in the maple syrup and lemon, and let the curry simmer.
5. Add the miso paste and water. Continue to simmer for around 4 minutes.
6. Steam your vegetables while the curry continues to cook.
7. Add your curry to a bowl, mix in your noodles and vegetables of choice. Top it with a lemon wedge and some sesame seeds π enjoyππ½
