Zoodles with Marinara Sauce
This recipe can be used with regular pasta, zoodles (as shown in the pic), chicken, shrimp, lasagna, the options are endless! The first time I saw this recipe, it included red wine as a main ingredient. Instead, I used grape juice and the taste came out perfect. I’ve been using this recipe for years and it never fails.
Ingredients:
Olive oil
1/2 of a red grape juice (125 ml)
1 and a 1/2 onion cut into cubes
2 garlic cloves cut into small pieces
2 garlic cloves mashed
5 peeled tomatoes cut into cubes
1 teaspoon tomato paste
black pepper and salt to taste
Oregano or basil to taste
Procedure:
- Add olive oil to a pan and leave to simmer. Once it’s hot, add in the onions until they become brown and then add in the two kinds of garlic. Once those have begun to cook add in the tomatoes as well as the oregano/basil to taste. Next add the teaspoon of tomato paste and grape juice. Add hot water until desired thickness is reached (for me this is only a couple of tablespoons because I like the sauce to be thick). Add salt and pepper to taste. Enjoy😋
NOTE: If you choose to make zucchini noodles, the trick is to never put the noodles in a pan, that will make them mushy. I usually microwave the noodles with no added water or anything else for 4-5 mins and they come out perfectly cooked.
