Oven Baked Spicy "Fried" Chicken

I love using the oats in place of breadcrumbs! This is a very simple alternative to a spicy fried chicken sandwich. I used protein buns from approved market. 

Serves 2-3 

Recipe:

2-3 chicken breasts 

1.5 cups oats 

2 tsp paprika 

1 tsp cayenne 

1 tsp garlic powder 

1 tsp pepper 

1 tsp salt 

2 cups almond milk 

1 egg 

1. Combine the spices in a small bowl and mix well. 

2. In a large bowl, add the almond milk, egg, and half of the spice mixture and mix well. 

3. Pound the chicken breasts to flatten them out a bit. 

4. Place them in the almond milk mixture and keep it in the fridge to marinate for 30 minutes up to 4 hours. 

5. Blend the oats in a food processor until it turns into a mixture that resembles Panko breadcrumbs. 

6. In a large bowl, mix the rest of the spice mixture with the oats. 

7. Preheat the oven to 200 deg C. 

8. Take the chicken breasts out of the milk, coat them with the oat mixture, and place them on a lined baking tray. 

9. Spray them with Avo oil or spray oil of choice and bake for 30 minutes. Flip the chicken and bake for another 10 minutes. 

10. Coat the breasts with the hot sauce and bake for an additional 5 minutes. 

For the hot sauces:

1/2 cup hot sauce 

1 tbs sriracha 

1 tbs coconut oil, melted

2 tbs maple syrup (or sweetener of choice) 

1. Mix everything together in a small bowl. 

2. Heat it over medium heat for 2-5 minutes or until it starts to bubble.

3. Coat the chicken breasts with the sauce and bake it for an additional 5 minutes.
