Salmon Power Bowl with Cauliflower Rice
This recipe is very simple and customizable based on what you have in your fridge/pantry.
Ingredients:
Makes 2 bowls
For the salmon:
2 salmon fillets
1 tbs olive oil
3 cloves minced garlic
2 tbs cilantro (chopped)
2 tbs honey
1/2 lemon
Salt/pepper
Sprinkle of Paprika
Procedure:
1. Preheat oven to 200 deg C.
2. Dry the salmon fillets with a paper napkin, then drizzle 1 tbs of olive oil and cover all sides. Sprinkle with salt/pepper/and chili flake.
3. Place aluminum foil on baking tray and place the salmon fillets on top.
4. Mix together the honey, lemon, cilantro, and paprika in a bowl.
5. Pour mixture on top of the salmon.
6. Fold up the aluminum foil around the two salmons, but do not close the foil. Keep it open from the top.
5. Bake in oven for 15 minutes.
6. Place on top of finished bowl and drizzle some of the remaining sauce from the foil on top.
For the cauliflower rice:
1 head cauliflower
1 tbs olive oil
1/2 tbs lemon (optional)
A handful of cilantro (optional)
1. Pulse the cauliflower in a food processor or blender until it resembles grains of rice (do not over blend).
2. Heat the cauliflower in a pan with 1 tbs of olive oil. Add in the lemon and cilantro and mix well.
3. Transfer to a bowl as the base.
For the veggies:
1/2 beetroot sliced
1/2 of an avocado sliced
Veggies of your choices- we used carrots, green beans, broccolini, and zucchini.
Procedure:
1. Either roast the veggies or stir fry it on a pan with a little olive oil, lemon, ginger, and garlic. (We stir fried it for a quicker meal.)
*note: you can save half the veggies and salmon in the fridge for another meal*
