Peanut Butter Chocolate Chunk Cookies

These cookies are made from GF oats and RSF chocolate! 


Ingredients:


1 cup oats blended to a semi-flour consistency
1 cup peanut butter 
1.5 tsp baking powder 
2 eggs
1 tsp vanilla 
1/2 cup coconut sugar or granulated RSF sweetener of choice 
3/4 cup sugar free chocolate broken into chunks 

Directions:


Preheat oven to 180 deg C
1. Mix the oats with the baking powder in a bowl. 
2. Use an electric mixer to mix the peanut butter, coconut sugar, vanilla, and eggs in a large bowl. 
3. Combine the oat mixture with the peanut butter mixture and mix by hand. 
4. Fold in the chocolate chunks. 
5. Line a baking sheet and shape the dough into balls. Press the top of the cookies down. 
6. Bake in the oven for 10 minutes, and let it out to cool.
