Breakfast Corn Fritters

This is inspired by Granger and Co ‘s own recipe for corn fritters. It is nice paired up with an avocado salsa, but I couldn’t find any ripe avocados today 😢 you can use fresh or frozen corn. 

Ingredients:

2 cups corn (if frozen let it out beforehand to thaw)

2 eggs

1 cup brown rice flour (you can sub with alternatives) 

1/2 cup milk of choice 

1 tsp baking powder

1/2 tsp paprika

1/4 tsp cayenne pepper (optional)

1 red bell pepper

1/4 cup sliced spring onions

1/4 cup chopped coriander 

1/2 lemon 

Salt & pepper 

Avocado Oil ( or vegetable oil of choice) 

Procedure:

1. Mix the flour,baking soda, salt, pepper, and spices in a bowl. 

2. In a separate bowl whisk the eggs with the milk.

3. Add the flour mixture to the egg mixture and mix well. 

4. In a separate bowl mix the corn, coriander, bell pepper, and spring onion together. Add in a squeeze of lemon. 

5. Slowly add the batter to the corn mixture, mixing in between. Add only enough batter to cover the corn (you probably will not use all the batter). 5. Heat a tablespoon of oil in a pan on medium heat and add in 2 tablespoons of the corn mixture.

6. Cook it for a few minutes on each side (until it browns). Then, place it on a paper towel to dry it off. 

7. Serve with some avocados and spinach.
