Shakshooka

This is such an easy breakfast recipe that you can customize based on whatever vegetables you have around. 

Serves 1 (you can increase the tomato& eggs to increase the portion size)

Ingredients:
1/2 can of tomatoes (pick 2 out with a little liquid) 
2 eggs 
1/4 of an onion chopped, or 1/2 of a small onion 
1/4 tsp cumin powder
1/4 tsp turmeric powder 
1/4 tsp cayenne powder
1/4 tsp paprika 
Chili flakes, to taste 
Salt & pepper to taste 
Handful of cilantro
1/2 tsp agave/honey/sugar of choice (optional) 

Procedure:
1. Heat some spray oil or olive oil in a small skillet, then add the onions and garlic, and whatever vegetables you want to add. Add the spices.
2. Once the onions turn translucent, reduce the heat and add the canned tomatoes. Break up the tomatoes in the pan. Add in your sweetener (if using).
3. Let it simmer for 3-5 minutes, then create 2 wells in the tomato mixture and crack the eggs in the wells. 
4. Cover and let it cook for you 10-15 minutes depending on how runny you like your eggs. 
5. Top it off with some chili flakes and cilantro and enjoy 😋
