Maple Cinnamon Baked Oatmeal

A different take on traditional oatmeal! This recipe can be adapted based on what you have in your pantry. It’s such a satisfying and filling breakfast, and you can make 1 batch to have for the whole week πŸ˜‹ 

Ingredients:

1 cup rolled oats 

1 tsp baking powder

2 tsp cinnamon plus more for topping 

3 tbs desiccated coconut

1 1/4 cup milk of choice 

1 tsp vanilla 

1/4 cup maple syrup

1/4 cup nut butter of choice (I used peanut butter)

2 flax eggs, you could use 2 normal eggs too * 

1/4 cup toasted nuts (I used walnuts) for topping 

Procedure:

1. Preheat oven to 190degC.

2. In a medium bowl, mix the dry ingredients together. 

3. In a separate bowl, mix the wet ingredients together. 

4. Combine the wet ingredients with the dry ingredients.

5. Grease an oven safe dish and pour the mixture into it. Top it off with your toasted nuts and a sprinkle of cinnamon. 

6. Bake for 30-35 minutes, or until golden brown and enjoy!

**Note: 1 flax egg= 1 tbs milled flax seeds + 3 tbs water and let it sit for 5 minutes to thicken. (Just double it for 2 flax eggs)
