Chocolate Protein Pancakes

These refined sugar free pancakes are so light and fluffy because of the arrowroot powder in them. I’m not a huge protein powder person (as opposed to the other fitfoodie), but I’ve been making an effort to include protein in my breakfast every day to keep me satisfied longer until lunch time, and it has been working so far! I also noticed that it has helped reduce my sugar cravings throughout the day. I have been loving using the cacao protein powder shown in the next picture since it is made from real clean ingredients and has no artificial after taste!

Recipe:

1 & 3/4 cup almond flour

2 tbs arrowroot powder* (got mine from @bobsredmill at @saveco) 

1 tsp baking powder 

2 tbs chocolate protein powder 

1 tbs collagen powder (optional)

3/4 cup milk of choice 

1 egg

1 tsp vanilla 

2 tbs honey or maple syrup

Procedure:

1. Beat the eggs by hand, then add all the ingredients together in a large bowl and mix well. Add more flour a little at a time if you would like the batter to be thicker.

2. Heat a greased skillet on medium heat and cook a couple of minutes on each side.

I topped mine off with some extra maple syrup and cacao nibs!

*Note: you can sub coconut flour or more almond flour for the arrowroot powder.
