Beetroot Falafel

You can have it with salad and some tahini dressing or wrapped in a pita bread . All you need is a food processor and 5 ingredients! 

Ingredients:

1 large beetroot (or 2 small ones)

1 can chickpeas (drained and rinsed)

A handful of cilantro 

2 cloves garlic

1 tsp cumin

.5 tsp salt 

Procedure:

1. Peel and cut up the beetroot into cubes and bake in the oven for 40 minutes. Set aside to cool.

2. Preheat oven to 200 degrees on fan setting. 

3. Add all the ingredients (including the beetroot) to a food processor and blend. It does not have to be 100% smooth as long as you can shape them.

4. Shape them into small balls and place them on a greased baking pan, then press down to flatten them a bit. (I used a silicon mat and they didn’t turn out as crispy as I wanted so I recommend to place them directly on the baking pan.)

5. Bake for 40 minutes. If it is not crispy by the end of it, broil them for 5 minutes on each side. 

6. Serve on top of a salad or bread and enjoy 😊
